Watermelon Sugar Cookies


Hope everyone had a wonderful Fourth of July! One of the many things that I served at our BBQ this year was a delicious sugar cookie recipe that mimics the look of a slice of watermelon.
I wanted to make a fun treat that was cute and kid friendly!
So here is the cast of characters:
Sugar cookie mix
Vanilla frosting
One egg
A stick of butter
As many chocolate chips as you need to make the "watermelon seeds"
(I used three chips per cookie half)
And red and green food coloring.
Simple, Right?
 
In large mixing bowl, I mixed the egg and softened stick of butter with the cookie mix. Then I slowly mixed in about 6 drops of green food coloring to make my cookies watermelon green!
You can add more or less depending on the color you are looking for.
Bake those babies according to package directions and they come out like this!
After the cookies are nice and set,  I started working on the frosting. Don't work up a sweat on this one ladies......I added about 7 or 8 drops of red food coloring to the Vanilla frosting, Which in turn colored it pink! See I told you. Easy. Great idea also if you are teaching your children about mixing colors! Nixon probably knows more about it mixing colors then I do.
Then just take the frosting and spread it all over the cookie. I left the outlying edges of the cookie showing to give it that "watermelon rind" look. 
After the cookies are all frosted, You take a very sharp knife and slice right through the middle of them and that makes the cookie into a half moon shape. Easiest cookies ever!
Add as many chocolate chips to each cookie as you like and enjoy! We sure did!!

The fun part of this recipe is that the children can really get into it and help you decorate the cookies and add the chocolate chips! Mine were not at all perfect, But a fun way to get the littles involved in preparation for our goodies for a Fourth of July celebration!
